A place to learn a new language, the Koehler Method of Dog Training, which is an entire language of communication between owner(s) and their dog. Let the journey begin.
What is "come" mean? And why are you using "Come"? It doesn't mean Heel and that is what command you should be using. So I am confused. Why are you using the "Come" and "Stay with me" and then using "Heel". What are you communicating to Sofie with multiple commands. Huh?
She moved on the Sit/Stay, the correction was to do what you did, move towards her and simply do an upward leash correction. You started out SO WELL, then the correction disintegrated into mush and you let her reposition you to her. Nope, if it helps you, draw a 3 sided Place Board with chalk on the ground where you will leave her on a Sit/Stay, then if she moves you know exactly where to reposition her inside those chalk lines. With the motorcycle, great thinking to get her out of there, but anytime there is a safety issue, use the leash with leash held in right hand in the Walking Position. Me? I would have heeled her away (which you did promptly) done a Sit/Stay and remained standing beside her to stabilize her and to correct when needed (and it was needed). Down is lovely.
It's as though you are hesitant and asking Sofie to do commands she already knows, just the leash position has changed in this practice EXAM? You ok? What's up?
We tried. Lots of distractions.
